I don’t know if I can say it enough, I love my wife’s cooking. She always comes up with great dishes to eat, and dinner is always a treat. I really love eating this dish when she makes it, and while usually she does this with wings, sometimes it’s nice to have ginger and scallion chicken without having to use your hands and eat around chicken bones.
Ginger and Scallion Chicken
Cut and slice chicken cutlets into thin slices. (I also use a meat tenderizer to flatten chicken).
Marinate chicken with soy sauce, sesame oil, and corn starch.
Cut scallions into about 2-inch pieces and thinly slice up the ginger – set aside.
Using a non-stick pan, add a couple tablespoons of oil (I usually use canola oil) and place a few pieces of chicken into the pan.
Flip after a couple mins.
Once all chicken is cooked, add back into pan along with ginger and scallions.
Add some oyster sauce to taste.
We also had them with string beans because you know you need have your vegetables!
