Who doesn’t like breakfast for dinner? When we told #DerekEng that we were going to have breakfast foods for dinner he said it was silly, but in the end he enjoyed it! I mean really, do mealtime names really determine what food you’re allowed to eat? Our dinner/breakfast spread of oven fried chicken and waffles, corned beef hash, broccoli, scrambled eggs and ham was pretty good, so you tell me!

Waffles
1 1/3 cups flour
2 teaspoons baking powder
1/2 teaspoon salt
1 tablespoon sugar
2 eggs, separated
1 1/4 cup milk
3 tablespoons oil
1 teaspoon vanilla extract
In a bowl, combine flour, baking powder, salt and sugar and set aside.
Beat the separated egg whites just until stiff, moist peaks start to form.
Then in another bowl, beat yolks lightly, then stir in milk, oil, and vanilla extract and blend well.
Pour liquid all at once into the dry ingredients, beat until smooth, then fold in the egg whites.
Bake in a waffle iron.

Oven Fried Chicken
Cut up the chicken cutlets into smaller pieces or use chicken tenders.
Marinate chicken with soy sauce, garlic powder, and black pepper.
Coat chicken in breadcrumbs and place on baking sheet.
Bake in 400 degree oven for 10-15 mins, or until done. (Stephanie flips them mid-way).
Broil for 1 min to make crispy.

Corned Beef Hash
*A great solution because we had some leftover corned beef from another meal, but if you have to start from scratch, follow below:
Cook corned beef according to the package.
Cut up cooked (and cooled) corned beef into small pieces.
Cut up potatoes into small cubes and pan fry them with oil and season with salt and pepper.
Once potatoes are done, add corned beef into pan and season to taste.
*You can also chop and sauté an onion to add into this as well.

To round out the rest of the meal Stephanie also made some broccoli, because you need to have a vegetable dish, which she made by blanching in water. She also made some scrambled eggs and ham, which was a great way to eat the rest of the leftover cold cuts we had in the fridge.
